Cherry Vanilla Smoothie

Hi everyone,

I just bought some amazing vanilla beans and I don't think anything goes better together than vanilla and cherries! Enjoy!

Ingredients:

- 5 bananas
- 5-6 dates
- 1 1/2 c frozen cherries
- 1'' vanilla bean (If you are not using a high speed blender like a vitamix or blentec, you will need to open the vanilla bean and use just the seeds.  If you have a high spend blender you can throw skin and all in)

Directions: Blend and enjoy!

Apple Pie Datorade

Oh...so..good!

Ingredients:

- At least 10 dates, personally I make my datorade with 20-30 dates.
- 1 - 2 c apple juice depending on how many dates you use (if bought in the store, get the unfiltered kind)
- 1 dash cinnamon
- Water

Directions:

1. Blend all together until smooth.  Add as much water as you'd like to reach desired consistency.  This can be a drink that's really thick or you can make it as thin as you'd like.

Note: you can warm your water to make this a hot drink!

Heap O Fruit

This is a recipe from my almost finished low fat raw cookbook.  Sorry it's been SOOO long since I've posted, but I've been busy working on this cookbook.  Let me know what you think.  Enjoy!

Ingredients:

  • 15-20 dates
  • few Tbsp. shredded coconut
  • fruits of choice (bananas, berries, cherries, mango, peaches, etc.)
  • 1 banana

Directions:

  1. Process dates in a food processor until they form a doughy ball
  2. Sprinkle coconut in bottom of a 8” glass pie dish to cover
  3. Flatten out date “dough” in your hand 1 section at a time laying it on top of coconut to make a crust. Keep a little aside for topping.
  4. Make several layers of the fruit you chose on top of your crust-chop up any large fruit into bite sized peices.
  5. Blend 1 banana and a handful of the other fruit you chose and pour on top of the heap. Sprinkle with coconut and bits of date “dough”.

Salsa Fresca

This is a recipe from my recipe book that I am working on. It is in the preliminary stages now - figuring out all the exact amounts, picture taking, etc. so I'm not sure when I'll be finished, but I'll keep y'all posted! I was very surprised when I tasted this salsa the first time I made it. It is so simple and yet ssooo delicious!

Ingredients:

- 1 pint grape tomatoes (or equivalent of other kind)
- 1 stalk celery
-1 Tbsp green onions, optional
- 1/4 c cilantro
- juice of 1/2 lime or more if it's not very juicy.

Directions:

1. Place all ingredients in food processor and pulse until all is well combined but still a little chunky. Or if you prefer, you can blend it more.

2. Serve with fresh raw veggies - I like cucumber, celery, and romaine lettuce.

You can also add 1/2 of an avocado to this if you would like to make it a little hardier.

Note: If you don't have a blender or food processor, you can just dice everything and make a pico de gallo type salsa.
