Winter Cauliflower Salad

This salad is sooo good!  It's very hearty and creamy.  And the rosemary gives it such a satisfying robust flavor.  Try it out for the holidays!

Ingredients:

- 1 Head cauliflower, chopped finely with a knife or pulsed in a food processor.
- 2 c arugula, chopped roughly
- 1 1/2 c grape tomatoes, cut in half
- 1 red bell pepper, diced
- 1 c mushrooms, diced
- 1/2 tsp rosemary, minced
- 2 Tbsp tahini
- 1 1/2 lemons, juiced

Directions:

1. In a large bowl, mix together tahini and lemon juice with a fork.
2. Add all other ingredients to the bowl and mix well.

  2. Hi Meg! So sorry it has taken me this long to get back to you. I would say this will make about 2 servings for people eating a low fat raw vegan diet or about 4 average eater servings. :) So glad you enjoyed it!
